Quiche with eggs and spinach

Here's a delicious recipe for a spinach quiche with eggs:

Ingredients:

  • For the crust (store-bought or homemade):

    • 1 pre-made pie crust (9-inch) or your favorite homemade recipe
  • For the filling:

    • 1 cup fresh spinach, chopped (or 1/2 cup frozen spinach, thawed and drained)
    • 4 large eggs
    • 1 cup milk or cream
    • 1 cup shredded cheese (cheddar, mozzarella, or your choice)
    • 1/2 teaspoon salt
    • 1/4 teaspoon black pepper
    • 1/4 teaspoon nutmeg (optional)
    • 1/4 cup diced onion (optional)
    • 1 tablespoon olive oil (if using fresh spinach)

Instructions:

  1. Preheat the oven: Preheat your oven to 375°F (190°C).

  2. Prepare the crust: If using a homemade crust, roll it out and place it in a 9-inch pie dish. Prick the bottom with a fork and bake for about 10 minutes, until lightly golden. If using a store-bought crust, follow the package instructions for pre-baking.

  3. Sauté the spinach (if using fresh): In a skillet, heat the olive oil over medium heat. Add the diced onion and sauté for about 2-3 minutes until translucent. Add the spinach and cook until wilted (about 2 more minutes). Remove from heat and let cool slightly.

  4. Mix the filling: In a bowl, whisk together the eggs, milk or cream, salt, pepper, and nutmeg (if using). Stir in the sautéed spinach and onion mixture, along with the shredded cheese.

  6. Bake: Bake in the preheated oven for 30-35 minutes, or until the quiche is set and lightly golden on top. A knife inserted in the center should come out clean.
